Pour Over

Parameters

  • Coffee Beans: Use freshly roasted coffee beans and grind them to a medium-fine consistency, similar to granulated sugar.

  • Coffee Dose: A common starting point is a coffee-to-water ratio of 1:15 to 1:17. For example, for 200 grams of water, use around 14 grams of coffee.

  • Water Temperature: The ideal water temperature is between 194°F and 203°F (90°C–95°C).

  • Brew Time: The total brew time typically ranges from 2 to 2.5 minutes.

 

Procedure

  1. Boil water and let it cool for about 30 seconds to reach around 194°F to 203°F (90°C–95°C).

  2. Place the pour-over paper filter in the dripper and rinse it with hot water to preheat and remove any paper taste. Discard the rinse water.

  3. Weigh and grind the coffee beans to a medium-coarse consistency, similar to sea salt.

  4. Place the pour-over dripper on the scale and add the ground coffee.

  5. Start the timer and pour hot water in a circular motion to evenly saturate the coffee grounds. Allow the coffee to bloom for 30 seconds.

  6. Begin pouring water slowly in a circular motion, maintaining a consistent flow rate. Pour in small increments, working from the center outward and back.

  7. Continue pouring until you reach your desired coffee-to-water ratio. Aim for a total brew time of 2 to 2.5 minutes.

  8. Once the coffee has fully dripped through the pour-over, lift off the dripper and discard the used filter and coffee grounds.

  9. Swirl the brewed coffee in your mug or carafe to mix the flavors.

  10. Taste and savor your coffee, noting its aroma, flavor profile, and characteristics.

Notes

1) Water Temperature Guide

• Light Roast: 100°
• Medium Roast: 90–95°C
• Dark Roast: 80–85°C

2) Pouring Tip
Keep the spout relatively close to the bed of coffee. The higher you pour, the less agitation is created in the coffee. (Ideally, pour about 5 grams of water per second.)
